Dear Inu-papa
I made the maple baked salmon and it was awesome!!! Big hit w/ everyone. Plus I live in sugaring country, so always great to get another maple syrup recipe (since we have gallons of it). And I like to say “Fish-scar!!” as I put the fish in the oven.
I liked it so much, that I’ve decided to de-lurk and tell you, and in thanks, I’d like to share a recipe of mine for Soy-Ginger Tuna. It’s my recipe, so no copyright issues. Enjoy!
Soy Ginger Tuna
Ingredients 1-2 Ahi-grade tuna steaks 2 tablespons soy sauce 2 tabelspoons olive oil 2 tablespoons rice vinegar 1 tablespoon honey 1/2 cup teriyaki sauce 1 ½ cups ginger ale (or one 12 oz can = close enough) Sesame seeds to coat tuna
1. Combine soy sauce, olive oil, rice vinegar, and honey . Marinate tuna for at least 30 minutes (in the fridge).
2. Combine teriyaki sauce and ginger ale in a saucepan and reduce over medium heat by about 75% - will become thickened.
3. Preheat your grill, or a heavy cast iron pan or griddle over medium-high to high heat. Dredge tuna in sesame seeds. Cook ~ 2 minutes per side for rare tuna, or longer based on your preference for doneness. Slice across the grain into strips.
4. Serve drizzled with teriyaki/ginger sauce, with extra for dipping. Enjoy!

Shredded Chicken Spread
2 medium sized boneless skinless chicken breasts. 1 8oz package cream cheese, softened 1 celery rib, finely chopped 1 small onion, minced (recipe calls for a whole onion, I just use one medium sized slice so as not to overpower the spread's flavor) 1 tsp black pepper (or season to taste)
Boil chicken breasts 10-12 minutes if raw, or 20-25 minutes if frozen. Remove from pan to plate. With two forks, pull chicken into small pieces.
In a medium bowl, mix cream cheese, celery, onion and seasoning, if using. Chill in the refrigerator 2 hours or so to let the flavors meld.
I typically use this as a sandwich spread (it makes about 4 sandwiches, if spread liberally) or with crackers.

You probably tried to get to it from a Memoirs page. For some reason when I updated the links in the menu bar, the links to Cooking Papa from the Memoirs main page and chapters didn't get updated correctly, so they point at the wrong page. I'll fix it eventually, but it involves updating the link on all 32 chapters, which is going to be a pain.

I'm not sure which page it was, but I just checked and I can't get to it from Gallery or Dear Papa either. At least I can get to it, I wanted to try the cookie recipe.

Ah jeez, yeah, it does look like the links point to the wrong place from most of the sub pages. Funny, I kinda thought I fixed this... Urgh.

"Sushi" is an extremely broad term, like asking how to make "soup". Is there any particular kind you're wondering how to make?

Like...an Avocado and Cucumber roll?...I don't eat much sushi myself but I have plenty of friends who do and I can't say they, or myself, have heard, had, or seen a roll that just consisted of cucumber, rice, and seaweed.
Now eel, white tuna, salmon, mango, avocado, rice, seaweed, and tempura bits I've heard of (mmm...Dragon roll...)

Well, the ingredients in a Dragon Roll can change from sushi bar to sushi bar, but its pretty much rice, seaweed, two or three different types of fish, and avocado all rolled together. I just happen to call it a Dragon Roll, but I've also seen it called a Rainbow Roll (because the fish, which are wrapped on the outside of the rice, are all different colors so it makes a bit of a rainbow). Really there isn't any set name for specialty rolls, so there's a good chance its going by a different name by you.
Anyway, To make a roll you need to get a bamboo rolling mat and what you pretty much have to do is put down your rice in an even (there's a specific kind you have to use I think), put down the seaweed in an even layer over that (I think you might have to get it wet first), put down your avocado and cucumber (you want them to be in even strips) length wise; roll it all up, cut it in half, and then cut it into six pieces.
Granted I know nothing about making sushi so that's just my best guess, but you could always google "how to make _____ sushi" and probably find some directions.
